Vero kitchen is carefully managed by an award-winning Chef, Andrea Mugavero. Born in Sicily, into a family where food is both business and pleasure, Andrea Mugavero’s passion for cooking started early. The young chef would help in the kitchen and learn to bake all kinds of treats. Mugavero became head chef at the famous La Saliere Restaurant in Monte Carlo at a young age, which took his culinary expertise to the next level. The chef’s innovative dishes have an exciting modern twist on a classic Italian specialty. In addition, the modern Italian menu conceived by chef Andrea will focus on fresh seafood and authentic flavours. Moreover, with more than three decades of experience working at renowned Michelin-starred restaurants around the world, chef Mugavero brings his Italian heritage to every kitchen he enters. In an interview, “My involvement in Vero has been a thrilling journey, and I’m excited to take the lead and oversee the talented culinary team. Truly, I cannot wait to make guests smile when they taste my food and the rich taste of true Italian cuisine.” He said. Moreover, the chef primordial aims to take every diner on a unique culinary journey from Dubai to an exclusive beach on the island of Capri in every single bite.
Vero’s raw bar showcases an array of fresh, crudo-style dishes such as a Langoustine tartare, with lobster, pine nuts, Asian salad, crispy quinoa with white chocolate and yuzu, or Tuna tataki, with pan-seared tuna in a teriyaki soy sauce, sesame seeds, crispy quinoa, wasabi, avocado and fresh sprouts. Furthermore, Vero’s selection of pizzas includes the signature carpaccina, made with crispy dough, beef carpaccio, fresh rocket, Grana Padano and black truffle. In addition, Vero Gold Tower (Red prawns, langoustine, salmon, tuna tartare and oysters.) is a favourite. The guest should not miss Bresaola, Vitello Tonnato, Polipo, Crispy Calamari and Zucchini. Caviar is also famous in Vero. The Italian restaurant has a selection of it served with an array of condiments such as pears melba, blinis, chopped eggs, savoury cream, and chopped parsley. Diners may have an exquisite menu like Oscietra (It is extracted from the Acipenser gueldenstaedtii, also known as the “Russian sturgeon”. The sturgeons are sourced from the heart of the Ticino Park in Casanovo, Italy. All species are certified“Friends of the Sea”). And also Golden Steady ( These rare golden eggs originate from the oldest of the sturgeon Acipenser gueldenstaedtii, and are sought after for their richer flavour. The eggs are large at about 3mm, not dissimilar to Beluga in size, and they have a nutty, mellow taste which develops into a buttery sweetness similar to lobster.) Diners can satisfy their sweet tooth with traditional Italian desserts such as Tiramisu and Cannoli with ice cream and pistachio.
Vero restaurant housed inside Hilton Dubai Jumeirah announced the partnership with The Italian Supper Club to host a special dinner event on Saturday 28th May from 7 pm with Fabio and Flavio. Self-made chefs and creators of The Italian Supper Club Dubai. Pure Italian by blood but have lived in Dubai for 12 years now. “The six-course menu will feature dishes like carpaccio and slow-cooked grilled octopus with soft potato sauce, squid ink black squared spaghetti with sea urchins, light garlic sauce and lemon oil. Carnaroli risotto with authentic Mazara prawns from Sicily and fava beans puree and priced at AED 320 per person, including soft drinks, a selection of coffees and The Italian Supper signature barrel-aged Negroni.” Chef Andrea said in an interview.
