Pinza’s dough is made up of 80% water and 20% flour, using the sourdough, soy, rice, and soft wholewheat varieties. Their Classic margherita pizza at Pinza is packed with a side of chili oil. In December 2015, this unique DXB home-grown concept started to innovate, after spending countless hours kneading, baking, and tasting flour blends in Rome the team came up with their signature 30 hour-fermented base. They scour Italy for the best cured meats such as bresaola and beef pepperoni, even their Italian tomatoes, and all of their cheeses. All their vegetables are sourced locally when possible, ensuring that they select only the freshest GMO-free veggies and herbs for their toppings. Clients can join the team for a Pinza, cooked to order in their bustling Business Bay kitchen and delivered straight to any doorstep. Pinza’s dough is lighter, crispier and tastier, the team uses an 80% water per kilo ratio, compared to the standard 30-60%, then ferment their dough for a full 24-30 hours before baking. This offers a base that is lower in calories, with just the right amount of crunch in the crust, and a light and soft center. The team uses only a small amount of yeast and minimal gluten in our special dough recipe, so there is no bloated feeling.
The team uses a unique blend of four different types of GMO Free and no chemical additives flours to make sure your Pinza is perfectly balanced for maximum taste. Four flours for used for one perfect Pinza. They use naturally dried sourdough that honours Italian traditions and minimizes the use of yeast. Their soy flour and special fiber blend is packed with loads of flavor minus the extra calories, and avoid the need for animal fats for a naturally vegan base. Rice flour gives Pinza a beautiful golden color and adds a lot of crunch. The team has health-conscious recipes, Pinza is perfect for Dubai’s busy crowds. Clients can choose their organic toppings from one of Pinza’s in-house specialities.
