He has had an active role to play in even the most comprehensive characteristics of the restaurant, guaranteeing the definitive sensory experience to compliment the appearance and feel of Maya New York.
The venue has been revamped to guide in a new multi-dining and lounging experiences for the guests. Maya – Modern Mexican Kitchen and Lounge has access via a dedicated entrance and its own valet. The entrance is impressive and grand, beach-front hacienda. The lamp-lit pathway escorts guests up into the two-story restaurant and lounge. The place is warm and cozy with beautiful terracotta hues that add liveliness to a space that is exciting with Mexican flavour.
Sophisticated, Aztec-style art lines the walls, surrounding a spacious dining area. Guests are sincerely welcomed to the restaurant where a bridged pond leads to a massive wraparound restaurant terrace with its own bar area.
The unique décor is chic with dimmed lighting giving feel for a private dining experience. The Mexican tradition of sharing food around with family and friends is encouraged.
Visitors can get to the new Tequila Room, called the Tequileria, which houses 60 different labels of tequila. Everyone can come and enjoy the very best products that are brought in from around the world. The Tequileria offers the largest choice of tequila labels in UAE, some of them are imported specially for Maya.
Guests can venture towards the winding stair case that takes the restaurant to reach the rooftop lounge. With both indoor and outdoor seating. The indoor seating area features a cigar bar while the outdoor bar is famous for the remarkable views it offers.
The founder of Modern Mexican cuisine, Richard Sandoval is a specialist in interpreting the common ingredients and preparing delicacies using cooking methods of his home country. He excels in plating a contemporary and innovative style in each dish. Delicious crepes and fondue and traditional Mexican dishes such as fajitas, ceviche, and enchiladas are out of the world at Maya. For starters, guests can order Queso Fundido – a unique twist on the classic cheese fondue with tortillas in a pot of melted duo cheese and fresh mushrooms. The authentic, rich flavours are appetizing and the main course takes all on a culinary journey with the Roasted Chicken Cazuela, a traditional Mexican braise, tortillas, Mexican-style rice and mole poblano – a traditional, savoury sauce unique to Mexico. Guests can also relish the enchanting bomba de chocolate, a bitter-sweet chocolate mousse, accentuated with caramelized walnuts and topped off with sweet coconut biscuits.
