Created by Sanjay Dwivedi, their dishes offer the original fusion food of Peru a modern spin, combining flavours from Japanese, Chinese and Spanish influences for a truly exceptional dining experience. The brand celebrates music and art through the COYA Collective, hosting regular exhibitions, cultural events and parties for their guests.
The Peruvian kitchen is at the heart of COYA, the team maintains traditional elements of Peruvian cooking whilst combining influences from Japanese and Chinese cuisines to create mouth-watering dishes. Born 
from the spirit of adventure, COYA is on a mission to finding and serving the most exciting flavours in contemporary cuisine, home to Incan heritage and a passionate food culture.
