Back continues to impeccably combine the traditional flavors of Japan and Korea while still representing the integrity of each dish. With the opening of Dubai more flavors from Asia come together.
The Las Vegas chef opened up an eatery at W Dubai – The Palm. Known to be a rebel, Akira Back, is the Las Vegas chef with an attitude as eclectic as his award-winning dishes. Born in Korea and raised in Aspen, Colorado, this chef is a culinary genius. Akira is his innovative Asian fusion restaurant on the Palm’s West Crescent, in an area that has become populated with celebrity chefs. Opening in the same hotel as Akira is Torno Subito, the first restaurant in the Middle East from Italian culinary giant, Massimo Bottura. Akira is adding Dubai to a list of restaurants that spans across continents, and the cavernous, artistic space.
A private
elevator offers a feel of a mesmerising tunnel, opening up into an industrial-looking dining-room with open cooking stations to make diners feel like celebrities right from the movies. Art from Back’s mother are placed on the walls to the cutlery and plates. There is adjoining terrace is a sight for diners who are looking for outdoor comfort. This Japanese restaurant in W Dubai – The Palm is ideally situated with huge floor-to-ceiling windows and a sprawling terrace lending views across the Palm and back over still waters to Dubai Marina, and at night it’s spell-binding. The dining room has plush leather booths and interactive art giving it a modern feel.
The restaurant 
is the first in the UAE from professional snowboarder-turned-Michelin starred-chef Akira Back. The dishes are split into hot and cold plates, sushi rolls, a robata grill and some salads and sharing options and feature famous signature dishes including the tuna pizza. There’s also a dedicated vegan menu featuring the likes of edamame risotto, Beyond Meat tacos and roasted cauliflower. The mains include a miso-marinated black cod that arrives with white foam and a chunk of fish. The portion size is small but the dishes are excellent full of flavour and crisp around the edges.
Akira Back creates a space for all eaters who can sit down together and enjoy a delicious meal.
