Recruitment process depends up the type of company. MNCs are much better because they follow International Standards and have established procedures for grievances, recruitment/selection and performance appraisal, training, development and induction.
Most of the professional companies have established Employee Handbooks thus making the workplace much fairer. As far as Nationality preferences go, the candidate does not stand any chance despite the fact that he/she is qualified if there is a nationality preference mentioned. Remuneration packages are very unfair for people from different lands.

Different employers have different approaches to salary even within the same industry. Salaries in Dubai are decided by what people are ready to accept rather than what the job to pay. So, it is difficult to say about the actual salary in Dubai.
